Turkey Gumbo
Ingredients
1 turkey carcass (or whatever is leftover from turkey)
1 large onion, chopped
2 stalks celery, chopped
1 bag of frozen corn
1 bag of frozen lima beans
1 bag of frozen green beans
1 28 oz. can whole tomatoes
1 28 oz. can tomato sauce
Chicken broth or stock
1 pack of Conecuh Sausage
Flour
Cooking oil for roux
White rice
Directions
- Boil turkey in a 50:50 mixture of water and chicken broth in a large gumbo pot
- Remove the turkey, pick any remaining meat from the bone, and return to the pot
- Add onion, celery, corn, lima beans, green beans, whole tomatoes, tomato sauce, and sausage to the large pot
- Make the roux in a separate skillet:
- Add about 2 tbsp. of oil to ski l let over high heat
- Add equal parts of flour while constantly mixing flour and oil together
- Reduce heat to medium as the flour and oil mixture brown.
- Once mixture is browned well remove from heat
- Add roux to large gumbo pot by rinsing the skillet with some of the liquid from the large pot
- Bring all to a boil, then reduce heat while gumbo continues to cook over a low boil
Gumbo is done when vegetables are tender, and sausage is cooked, around 2 hours. Serve gumbo over cooked white rice.
